Curious about the rest of the menu, we then ordered Nudo Banh Mi ($6) and a Spring Roll with pork and shrimp ($2). I had high expectations for these Vietnamese dishes, as one of the founders, Qui Tran, had a Vietnamese background and a family that ran Mai Lee. When I first walked in, I was greeted by a large poster of Voltron and a friendly face behind the cashier.

Nudo House's "Hebrew Hammer" is chicken noodle soup cranked to eleven. The broth coats the mouth with a rich blanket of chicken-fat-laden liquid and enough fermented black garlic to render Buffy unnecessary. It lingers — not that you'd want such perfection to leave — and serves as a golden canvas for hunks of chicken meat, noodles, bok choy, bamboo and a soft-boiled egg. As with the mushroom broth, or any of the broths for that matter, the amount of body that the chefs manage to contain in this liquid form is astounding. Thankfully, Nudo House is a well-oiled machine, so you don't have to wait too long to dig in.

The price was a little expensive for the ramens’ value, which might make a student operating on a lower budget choose to go to a closer and slightly less expensive option (for the value), Midtown Sushi and Ramen. Despite this, it is exciting that a ramen restaurant opened in an area that does not have many Asian cuisines. Hopefully, Nudo House will be able to grow, improve, and attract more customers as it gets more exposure. Although one bowl of ramen was enough for me, it did not satisfy the needs of my dad. A stereotypical teenage boy would have to order two bowls in order to be full.

This Vietnamese sandwich was where you could really tell that Nudo House understood Vietnamese cooking. The pork inside the Bahn Mi was the same fatty pork that was on the ramen, not the traditional barbecue flavor that I was expecting. Despite this, the soft pork blended well together with the cilantro, marinated carrots, and jalapeno. Sweet mayo lined the inside of the sandwich and added a different flavor to the Bahn Mi. But even with all these elements, the best part of the Bahn Mi was the bread. The baguette was toasted so that the outside was crispy enough to provide a nice crunch, but inner part of the bread was still soft.
Velasco worked at the Ritz and then the Chase Park Plaza, eventually teaching culinary classes and becoming a regular at Mai Lee. There, not only did she find the best pho she'd had outside of Montreal, she also found a friend and culinary soulmate in Tran, who had grown up working at his family's storied restaurant. The two became fast friends and kept in touch even after Velasco left town to start a new life with her husband in Chicago. A lush outdoor patio, made complete with a roaring fire pit, is the perfect place to unwind with a drink from the full-service bar menu or to enjoy a cigar from Chart House’s premium cigar list. This weekend, I was excited to go visit the new ramen restaurant in St. Louis, Nudo House.

For dessert, Nudo House makes its own soft-serve ice cream, with playfulness matched by its substance. The selection changes regularly, and on my visit the choices were black sesame and coconut. The person working the counter offered to hand-swirl them, resulting in a combination that balanced the black sesame's almost peanut-buttery sweet saltiness with the nutty coconut. Their journey began about eleven years ago when Tran and Velasco met at the original Delmar Boulevard location of Tran's Vietnamese mainstay, Mai Lee. Velasco had moved to St. Louis from Montreal to take the sushi chef gig at the Ritz-Carlton in Clayton.
We currently have two locations in st. Louis - Creve Coeur and the delmar loop. The Classic Nudo ($12) is the best pork tonkotsu ramen I’ve eaten in St. Louis, so deeply flavored you expect to find Porky hanging out at the bottom of the bowl. As with the Hebrew Hammer, the broth is the prime source of pleasure, made with pork bones boiled for 20 hours.

That dessert, like everything else that comes out of Tran and Velasco's kitchen, is the perfection of its form. You wouldn't expect anything less, though, from two people who have gone to such lengths to bring world-class noodles to St. Louis. These demigods of ramen have indeed created their Aphrodite in Nudo House — and she's a perfect ten.
Located in a strip mall off Olive Blvd, the restaurant is about 15 minutes from Clayton. About six months after arriving in Chicago, Tran called with a proposition. The two had often talked about opening a restaurant of their own one day and shared an obsession with ramen. The Hebrew Hammer was not made with pork broth, which changed the overall ramen taste. Including chicken on the top and chicken broth, this ramen tasted more like an Asian chicken noodle soup with ramen noodles. Regardless of this, the broth was not bad, although it was salty just like the other broths had been.
There is actual chicken meat in the bowl as well as bok choy, bamboo and a soft-boiled egg, but I wouldn’t fault you for requesting nothing more than the broth and some noodles.
